Co-Executive Chef, Pacific Standard Time
A three-time James Beard Foundation “Best Chef: Great Lakes” finalist, Erling Wu-Bower’s focus and intensity have driven him to great creative heights. After graduating from the University of Notre Dame with a degree in Philosophy, Erling took a 180-degree turn and began his culinary career under Chef Paul Kahan’s guidance as a line cook at avec. In the 12 years since then, Erling has risen through the ranks at One Off Hospitality Group and most recently served as the driving force behind Nico Osteria’s kitchen.
Cooking runs in Wu-Bower’s blood; his mother is an accomplished food writer and his father a food-loving Cajun. Currently, he’s focused on opening Pacific Standard Time, alongside Co-Executive Chef Cosmo Goss, business partner Joshua Tilden and One Off’s Paul Kahan, Terry Alexander and Donnie Madia.
